Each tenderloin it will feed three people. For each tenderloin you will need:


  • 6 figs
  • 1 large apple
  • 1 medium onion
  • 1 tsp Garam Masala
  • Salt and pepper
  • 2 cloves fresh garlic
  • 1 tsp onion powder
  • Avocado oil to coat tenderloin
  • Sweet potatoes, diced
  • Onions, sliced or diced
  • Apple Figs, diced
  • Carrots, sliced
  • Parsnips, sliced or diced
  • Cumin
  • Salt and Pepper
  • Garlic powder
  • Onion powder


Preheat oven to 350 degrees. Spray two cookie sheets with oil. Mix figs, apple, onion, and spices together. Slice open tenderloin stuff with mixture and coat tenderloin with oil. Tie with butcher twine to hold together. Cook for 25-30 minutes.

On the second cookie sheet, place sweet potatoes, onions, apple figs, carrots.  Coat lightly with oil, then season with spices. seasoned with cumin, salt, pepper, garlic and onion power coated with avocado oil. Roast for 45 -55 minutes in the oven. This lets your tenderloin be able to stand for 10-15 minutes before slicing and plating for serving.
