Adjust for the number of fillets you are cooking


  • 6-8 ounce fillets of trout
  • Juice of 2-4 fresh lemons
  • Salt and pepper
  • Then dip into
  • 2-3 cups flour to coat fish
  • 4-6 eggs
  • 2 tbsp mayonnaise
  • 4 cups Panko Coating
  • 2 tbsp dry dill weed
  • 2 tbsp dry thyme


Preheat oven to 400 degrees and spray cookie sheet with oil. Towel dry fillets and sprinkle with salt and pepper. Dip in flour, shaking excess off. Dip in egg mixture, then press into Panko herb mix. Place on cookie sheet and bake for 12-14 minutes until flaky.
