Adjust for the number of pieces you are cooking. This is a pre-mix called Rocky Madsen’s Fish Crisp seasoned coating.


  • 6-8 ounce fillets of trout
  • Juice of 2-4 fresh lemons
  • Salt and pepper
  • 2-3 cups flour to coat fish
  • 4-6 eggs
  • 2 tbsp mayonnaise
  • Rocky Madsen’s Fish Crisp seasoned coating.


If really wet, Towel dry fillets sprinkle with salt and pepper dip in flour shake excess off. Then dip in egg mixture and press into fish crisp Cajun mix.

In a large deep cast iron frying pan, add 1/4 inch of vegetable oil and pre-heat on med-high. When oil is hot, add fish and cook for two minutes per side until golden brown. If you are doing multiple batches allow oil to get to temp before adding next batch. Serve with charred lemons.
